Forget pesto pasta and try this 10-minute summer alternative instead

If you're a big fan of pasta but sick of the typical summery taste of pesto, fear not, as there's an amazingly tasty alternative.

Pasta is a fabulous and versatile dish that keeps you full and tastes so good, but sometimes, if you eat it a lot, it can become boring.

However, Tesco has shared a tasty recipe as an alternative to pesto pasta, captioning it: "If pesto pasta is your go to, try this instead."

It's a "10-minute lemon ricotta pasta," and serves two people. It's so quick and easy to cook, so makes the perfect midweek meal for when you can't be bothered after work, but is so tasty.

To make it, you will need:

• 200g Tesco Finest rigatoni

• 250g tub ricotta

• 20g Parmesan, finely grated, plus extra shavings to serve (optional)

• 1 lemon, zested and juice of ½, remaining ½ cut into quarters to serve

• 1 tbsp extra-virgin olive oil

• 15g fresh basil, leaves picked and roughly torn

The delicious-looking pasta has just six ingredients and is bound to delight both you and the person you're dining with.

First, you need to boil a pan of lightly salted water and "cook the pasta according to the packet instructions".

While the pasta is cooking, you can "add the ricotta, grated Parmesan, lemon zest and juice and the oil to a large shallow bowl". Season the mix with salt and pepper and "mix well to combine".

Then, you can add "a couple of splashes of pasta water" to the bowl, alongside the pasta and the basil.

"Stir well to coat the pasta in the sauce, adding a bit more pasta water if necessary," Tesco shared.

They then recommend diving the pasta between the two bowls you're going to serve the food in, and adding parmesan shavings if you want them on the top.

In the comments, people praised the dish, saying how good it looked, with someone saying: "This is my kind of dinner."

Birds Eye's social media account suggested that if you "added peas," the meal would be "perfection".

One penned: "Gotta get the bits to make this in our next Tesco shop." Someone else said that it looked "delicious".
